the Scarsdale Medical 14 day Diet

BREAKFAST EVERY DAY
1/2 grapefruit- if not, use fruit  in the season
1 slice of protein bread, toasted, no spread added
Coffee, tea ( no sugar, cream or milk )

Combination salad, as many greens and vegetables as you wish

Tuna fish or salmon salad ( oil drained off ) with lemon and vinegar dressing

Salad of lettuce, tomatoes, cucumber, celery

Two eggs, any style ( no fat used in cooking )
Low fat cottage cheese
Zucchini, or string beans, or sliced or stewed tomatoes

Roast, broiled, or chicken, all you want ( skin visible fat remove before eating )
Plenty of spinach, green peppers, string beans

Salad of lettuce, cucumber, celery, tomatoes ( sliced or cooked )

SCARSDALE MEDICAL DIET SUBSTITUTE LUNCH
If you wish, you may substitute the following lunch for any lunch, any day, on the Scardasdale Medical diet.

1/2 cup low fat pot cheese or cottage cheese, mixed with 1 tablespoon of low-fat sour crean
Sliced fruit, all you want
6 halves of walnut or pecans, whole or chopped and mixed with the above or sprinked over the fruit
Coffee or tea

SECOND WEEK OF SCARSDALE MEDICAL DIET

Repeat all menus of the first week, It's as simple as that.
* Eat exactly what is assigned, Don't substitute
* Don't drink any alcoholic beverages
* Between meals you eat only carrots and celery, but you may have as much as you wish
*The only beverages allowed are regular or decaffeinated coffee, black, tea, club soda ( with lemon if desired )
*Prepare all salads without oil, mayonnaise, or other rich dressings. Use lemon and vinegar .
*Eat vegetables without butter, margarine, or other fat, lemon may be used.
*All meat should be very lean, remove all visible fat before eating. Remove skin and fat from chicken and turkey before eating.
*It is not necessary to eat everything listed, but Don't Substitude or add, Indicated combinations should be observed.
*Never overload your stomach. When you feel full. STOP !!!!
*Don't stay on the diet more than 14 days.

SACARSDALE HOME-BAKED PROTEIN BREAD
1 cup warm water
1 tablespoon dry yeast
1/2 teaspoon salt
1 teaspoon sugar
1/2 teaspoon cider vinegar
1/2 cup soy flour
1/4 cup gluten flour
11/2 cups whole wheat flour
Standard small bread pan (73/3 x35/8 x21/4 inches )
Pour water into mixing bowl, sprinkle dry yeast on water and let stan until it dissolves ( about 5 minutes )
Mix in salt, sugar, cider vinegar, Sift thoroughly then gradually add soy and gluten flours, then whole wheat flour.
Mix slowly until dough stiffens and does not stick to sides of bowl ( you may use a food proceessor, folowing machine directions, for this step )
Lightly flour a board, them roll out the dough feels smooth and elastic.
Coat bread pan with no-stick vegetables spray.
Shape the dough to fit, set into the pan, cover with dish towel and set in a warn place to rise to about the top of the bread pan,
Preheat oven to 325 .
Bake bread for about 1 hour or until well browned
Home-Baked bread is denser than commercial, so cut thin slices, then toasted, keep in refrigerator.
