Citrus-Spice Potpourri

1 orange
1 lemon
1 lime
1/3 cup water
1/4 cup whole cloves
2 tablespoons whole allspice
3 cinnamon sticks, broken up
3 bay leaves, crumbled
1 cup water
PREPARATION
 * Cut long strip from orange; lemon and lime, using sharp knife and being careful not  to remove white membrane with peel.
Cut strips into 1" lengths.
Reserve fruit for future use.

* Place peels in single layer on paper-towel-lined plate. Pour water into 1 cup measure.
Place water next to plate in microwave oven.
Microwave at high for 4 to 5 minutes, or just until peels begin to dry, tossing with fingers after every minute.

* Remove peels to another paper towel. Air dry for 24 hours. Place dried peels in small plastic food-storage bag. Add remaining potpourri ingredients. Secure bag , shake to mix.

* Place dry potpourri in small plastic food-storage bag for gift giving. Tie a ribbon at top bag to close. Place in small bowl with handle. Include decorative label that list contents and instructions for use.

* Scent room by placing 1 cup hot water and 1 tablespoon dry potpourri in small bowl with handle. Microwave at high for 2 to 3 minutes, or until boiling.
Remove from oven. Let potpourri stand. When cool, microwave as directed once or twice more.
